Cheese steamed brownies are an innovation of the brownie cake. Brownies are a baked or steamed dessert that gained popularity in the United States in the late 20th century. The origin of brownies was initially a cake that was cut into small pieces for easy consumption.

It is said that brownies originated from a chef who forgot to include a leavening agent called baking powder in his chocolate cake batter. As a result, the cake he made didn’t rise like a typical soft, fluffy, and porous cake. Instead, the cake without the leavening agent turned out denser, fudgy, and slightly moist.

Another story suggests that brownies began with a young pastry entrepreneur who was going through financial hardship. He could only afford to buy basic ingredients for making chocolate cake. Armed with a recipe book he owned, he experimented with the chocolate cake recipe all night. However, he was disappointed because the result differed from the recipe in the book. With courage, he sold the cake to the market. To his surprise, customers enjoyed the chocolate cake and placed orders for the next day.

The original brownie recipe consisted of flour, butter, eggs, and melted chocolate, along with almonds. This recipe remained unchanged for years. However, nowadays, there are countless variations of brownies. Brownies are no longer just brown; they come in various colors and flavors such as cheese, banana, blueberry, nuts, and coffee. Additionally, the baking process is not limited to baking; they can also be steamed.

Choosing The Flour

The type of wheat flour used for brownies is medium-protein wheat flour. However, if you want a softer and lighter texture for steamed cheese brownies, you can use low-protein wheat flour. There are several brands of wheat flour available in the market, and I use wheat flour from Bogasari. For medium-protein wheat flour, choose the Bogasari Segitiga Biru variant, while for low-protein wheat flour, choose the Bogasari Kunci Biru variant.

The Cheese Used for Filling and Topping Steamed Cheese Brownies

The cheese recommended for this steamed cheese brownies recipe is cheddar cheese. For Kraft cheese, you can use the Kraft Milky Soft Cheese variant. As for the grated cheese topping, cheddar cheese should still be used. Another alternative is using Prochiz cheese, which is more budget-friendly.

Tips for Making Moist and Fluffy Steamed Cheese Brownies:

1. Choosing the Steamer:

  • Select a steamer that matches the size of your baking pan. If the steamer is too large, there will be too much steam, which can make the brownies moist.
  • Opt for a steamer with small vent holes to prevent excess steam from escaping, which could make the brownies too wet.
  • A steamer with a glass lid or a conical shape is preferable to prevent steam from dripping onto the brownie batter.

In the past, I purchased a 24 cm Maxim Galaxy steamer for Rp250,000. However, it seems that this product is no longer widely available. Perhaps it has been replaced with a more versatile version like the Maxim Steamer Cassablanca, which features both a dutch oven and steamer functions.

  1. Preparing the Steamer:
    • Preheat the steamer for approximately 10 minutes before using it.
    • Line the steamer lid with a cloth to prevent steam condensation from dripping onto the brownie batter.
  2. Steam Temperature Adjustment:
    • Once the water comes to a boil, reduce the heat to medium to ensure even and ripple-free cooking of the brownies.
  3. Opening the Steamer Lid After Cooking:
    • Be cautious when opening the steamer lid after the brownies are done, as there will be a buildup of steam condensation on the lid. If this condensation drips onto the brownies, it can make them wet and affect their texture. The trick is to open and flip the steamer lid quickly to prevent any water from dripping.
