Cromboloni, a cake currently dominating various social media platforms, has garnered unexpected enthusiasm from culinary enthusiasts. From TikTok to Twitter, and even Instagram, we’re frequently bombarded with intriguing reviews and descriptions of this cake. But, what exactly is cromboloni?
Visually, cromboloni is a type of cake or pastry topped with various toppings. It’s round with an outer texture resembling the surface of a croissant.
This cake is a unique blend of croissant and bomboloni, the Italian donut without a hole. It’s typically served with vanilla or chocolate cream filling, adorned with drizzles of melted chocolate or various bright colors as toppings.
For cromboloni enthusiasts, the delight comes from the crispy texture on the outside to the melting sweetness of the filling inside the mouth. This viral cake is easily found in various bakeries with prices around US$ 2 per piece.
However, before becoming a global trend, it turns out that cromboloni has long been a favorite in New York, United States. Created by chef Scott Cioe from Lafayette Grand Cafe & Bakery in 2022, it was initially named The Supreme before eventually being known as cromboloni.
The process of making this cake cannot be underestimated. Scott requires a minimum of three days to create the perfect cromboloni, starting from making the dough to the lamination process, before finally placing it in the oven for baking.
Cromboloni Croissant Recipe
Ingredients
- 200 g high-protein flour
- 60 g low-protein flour
- 40 g fine sugar
- 20 g milk powder
- 4 g instant yeast
- 1/2 tsp salt
- 1 pc egg (large, approximately 55 grams)
- 100 ml cold water
- 18 g butter
Instructions
Preparation of Basic Dough:
- Mix high-protein flour, low-protein flour, fine sugar, milk powder, instant yeast, and salt in a large bowl. Stir until well combined.
- Add the egg and cold water to the dry mixture. Stir until incorporated.
- Incorporate the butter and knead the dough until it becomes elastic and non-sticky, roughly for 10-15 minutes.
Dough Proofing:
- Rest the dough in a covered container for about 60-90 minutes until it doubles in size.
Creating the Layers:
- Take 115 grams of butter (or pastry/croissant margarine), place it between two sheets of parchment paper, then roll it out into a thin rectangular layer. Chill it in the refrigerator until solid.
Layer Formation and Folding:
- Once the dough has proofed, place it on a floured surface. Roll the dough into a thin rectangular shape.
- Put the chilled butter sheet in the center of the dough, then fold the edges of the dough towards the center, followed by folding the top and bottom edges until it forms layers similar to making puff pastry.
- Roll the dough into a rectangular shape again, then fold and chill it in the refrigerator for about 20-30 minutes.
Baking:
- After chilling, roll out the dough into a thin rectangular shape again. Cut the dough into small rectangular pieces.
- Place your desired filling in the center of each dough piece, then fold and seal the edges neatly.
- Bake in a preheated oven at around 180-200 degrees Celsius for 15-20 minutes or until they turn golden brown.
