  • 3 large sized chicken eggs, beaten

  • Sufficient amount of spring onions, roughly sliced then finely chopped

  • 1 stalk of celery, roughly sliced

  • 3 tablespoons lukewarm water

  • ½ tablespoon of cornstarch, dissolved in 2 tablespoons of water

  • 1 teaspoon garlic powder

  • ½ teaspoon of ground pepper

  • ½ teaspoon of powdered broth

  • Salt to taste

  • Sufficient amount of vegetable oil

  • Sufficient amount of skewers

Directions

  • Preparation of Ingredients:
  • Beat the chicken eggs in a bowl.
  • Finely chop the spring onions and celery, then add them to the egg mixture.
  • Combine the cornstarch solution, garlic powder, ground pepper, powdered broth, salt, and lukewarm water into the egg mixture. Stir until all ingredients are evenly mixed.
  • Preparing the Pan and Oil:
  • Heat sufficient oil in a pan over medium heat.
  • Frying Process:
  • Pour the egg mixture into the hot oil using a ladle.
  • Let it sit briefly until the mixture slightly solidifies.
  • Roll the mixture using skewers or a suitable spatula to form rolls. Repeat the same for the remaining mixture.
  • Serving:
  • Drain the fried egg rolls on paper towels to remove excess oil.
  • Serve the egg rolls with your preferred sauce for added flavor.

  • Mixing the egg batter with a bit of water helps increase the volume of the batter despite using a small quantity of eggs. However, there’s a risk of the batter becoming too dry, which can make it difficult for the egg to stick onto the skewers.
  • Adding chicken broth powder enhances the savory taste of the egg rolls. Stir to your preference for a richer flavor profile.
  • A sufficient amount of hot oil is the main key to making egg rolls. This allows the eggs to expand properly and results in a more flavorful taste.
  • When pouring the egg batter, do it from a slightly distant range to allow the batter to expand. Once the batter begins to bubble, promptly insert the skewers and roll until finished. Ensure to press the edges of the pan for compact egg rolls and reduced oil.
  • To prevent excessive oil absorption in the egg rolls, it’s better to compact them first by gently tapping them along the edges of the pan before the draining process.
