There are several brands of wheat flour available in the market, and I use wheat flour from Bogasari. For medium-protein wheat flour, choose the Bogasari Segitiga Biru variant, while for low-protein wheat flour, choose the Bogasari Kunci Biru variant.

The cheese recommended for this steamed cheese brownies recipe is cheddar cheese. For Kraft cheese, you can use the Kraft Milky Soft Cheese variant. As for the grated cheese topping, cheddar cheese should still be used. Another alternative is using Prochiz cheese, which is more budget-friendly.

The powdered milk used in this steamed cheese brownies recipe is used to impart the distinct creamy milk aroma. Simply purchase Dancow powdered milk in sachets. Dancow milk is commonly used for making various cookies because of its noticeable milk aroma.

1. Choosing the Steamer:

  • Select a steamer that matches the size of your baking pan. If the steamer is too large, there will be too much steam, which can make the brownies moist.
  • Opt for a steamer with small vent holes to prevent excess steam from escaping, which could make the brownies too wet.
  • A steamer with a glass lid or a conical shape is preferable to prevent steam from dripping onto the brownie batter.

In the past, I purchased a 24 cm Maxim Galaxy steamer for Rp250,000. However, it seems that this product is no longer widely available. Perhaps it has been replaced with a more versatile version like the Maxim Steamer Cassablanca, which features both a dutch oven and steamer functions.

    • Preheat the steamer for approximately 10 minutes before using it.
    • Line the steamer lid with a cloth to prevent steam condensation from dripping onto the brownie batter.
  2. Steam Temperature Adjustment:
    • Once the water comes to a boil, reduce the heat to medium to ensure even and ripple-free cooking of the brownies.
  3. Opening the Steamer Lid After Cooking:
    • Be cautious when opening the steamer lid after the brownies are done, as there will be a buildup of steam condensation on the lid. If this condensation drips onto the brownies, it can make them wet and affect their texture. The trick is to open and flip the steamer lid quickly to prevent any water from dripping.

  • Add all-purpose flour and stir until well combined. Then, add the cheese and mix until it’s evenly distributed. Finally, add the melted margarine and stir until everything is well incorporated.
  • Transfer the mixture into a baking pan and spread it evenly. Steam for 20-30 minutes over medium heat with the container covered with a cloth.
  • Ensure that the cake is fully cooked by poking it with a toothpick. If no batter sticks to it, the cake is done.
