Ingredients

  • 500 g medium-sized shrimp

  • 2 pieces lime, juice extracted

  • 3 thinly sliced lime leaves

  • 3 tbsp honey

  • 1 tsp ground coriander

  • 1 tsp pepper

  • 2 tbsp oyster sauce

  • 2 tbsp sweet soy sauce

  • Salt to taste

  • Adequate butter

  • Adequate water

  • Ground Spices:
  • 6 curly red chilies

  • 3 shallots

  • 3 cloves garlic

  • 2 cm ginger

Directions

  • Clean the shrimp by splitting the back, then soak them in lime juice for approximately 15 minutes.
  • Grind all the ground spices and sauté with a bit of butter. Sauté until fragrant, then add coriander, pepper, sweet soy sauce, lime leaves, oyster sauce, honey, salt, and water. Stir until the liquid reduces.
  • Marinate the shrimp with the sautéed seasoning for 30 minutes. Afterward, skewer the shrimp onto satay sticks for grilling.
  • Prepare grilling equipment and grill the shrimp over charcoal. Occasionally baste the shrimp with the prepared marinade. Add a little butter if necessary.
  • Once cooked, serve the shrimp satay with chili sauce and lime.

TIPS

  • Opt for fresh shrimp for the best results. Cleaning and soaking them in lime juice not only removes any fishy odor but also enhances their flavor.
  • Let the shrimp soak in the marinade for at least 30 minutes. This allows the flavors to infuse thoroughly, ensuring each bite bursts with taste.
  • When grilling the shrimp, baste them generously with the marinade intermittently. This helps lock in moisture and intensifies the flavors.
  • Use skewers that have been soaked in water beforehand to prevent them from burning while grilling.
  • Adjust the seasoning according to your preference. Add a dash of extra sweetness with honey or elevate the spice levels with more chili for a personalized touch.
