Ingredients

  • 2 scoops of rice,

  • 2 sheets nori,

  • 3 cloves garlic,

  • 5 shallots,

  • oyster sauce to taste,

  • tomato sauce to taste,

  • soy sauce to taste,

  • sugar, salt, pepper to taste,

  • 2 omelette eggs, cut into long slices,

  • cucumber, sliced lengthwise to taste,

  • green chili peppers to taste.

Directions

  • Grind shallots and garlic into a fine paste.
  • Heat oil in a pan and sauté the shallot and garlic paste until it becomes fragrant and golden.
  • Add the prepared rice to the pan with the spices, stirring well. Mix in oyster sauce, soy sauce, a little sugar, salt, and pepper. Cook until all ingredients are well combined and flavorful, then remove from heat.
  • Lay a sheet of nori on a sushi mat or bamboo placemat. Spread the warm fried rice over the nori, and add thin slices of omelette egg and fresh cucumber on top. Roll the sushi tightly lengthwise.
  • Cut the sushi roll into several pieces. Garnish each piece with a slice of green chili pepper.

Notes

  • Use chilled rice as it tends to be drier and less sticky, making it easier to roll without breaking.
  • Soak sliced green chili peppers in warm water before serving to reduce spiciness without losing their aroma.
  • Ensure to sauté shallots and garlic until they are thoroughly fragrant to allow the spice flavors to fully infuse.
  • Use high-quality sweet and salty soy sauce for a richer, more layered flavor.
  • Avoid overfilling with rice and fillings to prevent the nori from tearing when rolled.
  • Use a bamboo mat to help roll the sushi tightly, ensuring it doesn’t fall apart when cut.
  • Use a very sharp knife to cut the sushi, ensuring the nori doesn’t tear and the slices are clean.
  • Serve the fried rice sushi immediately after preparation to enjoy the crisp texture of the nori and the savory taste of the rice.
