Ingredients

  • Marinade ingredients:
  • 350 g chicken thigh filet

  • 100 g peeled shrimp

  • 1 tsp salt

  • 2 tsp sugar

  • ½ tsp baking powder

  • Others:
  • Grated garlic (add 1 tbsp water)

  • Grated ginger (add 1 tbsp water)

  • 1 pc egg white

  • 50 ml cold water

  • 2 tsp oyster sauce

  • 2 tsp sesame oil

  • ½ tbsp soy sauce

  • 2 tbsp oil

  • ½ tbsp salt

  • 1 tbsp sugar

  • 1 tsp mushroom stock powder / MSG

  • ¼ tsp pepper

  • Shumai skin, to wrap

  • Carrot, small-diced

Directions

  • Marinate the chicken and shrimp with baking powder, salt, and sugar. Mix well and marinate for 15-30 minutes.
  • Rinse the chicken and shrimp until the water is clear. Pat dry.
  • Add water into the grated ginger and garlic.
  • Add some of the chicken into the food processor along with salt, sugar, mushroom powder, and pepper. Blend until smooth.
  • Add the ginger and garlic liquid, egg white, oil, soy sauce, oyster sauce, sesame oil, and tapioca flour.
  • Slice the remaining chicken and shrimp, then add into the food processor. Chop roughly.
  • Transfer the dough into a bowl. Add cold water and mix well.
  • Shape the dough with shumai skin. Steam for 15 minutes.
  • Chicken & Shrimp Shumai is ready to serve.
