The sweet symphony begins with the meticulous blending of whipping cream, condensed milk, vanilla extract, and a hint of salt for the Vanilla layer. The key lies in whipping the cold cream to perfection, ensuring a firm consistency that imparts the signature smooth mouthfeel of Viennetta.

Who has never heard of this legendary ice cream? Viennetta ice cream was first produced in the 80s. This ice cream with its classic shape and flavor is best consumed when you’re relaxing. To make it even more special, I’m adding a coffee flavor using Baileys The Original Irish Cream. The taste blends super well!

Ingredients

  • Coffee Flavor:
  • 300 ml whipping cream

  • 50 g condensed milk

  • 80 ml milk

  • 1 pc egg yolk

  • 2 tbsp cornstarch

  • 100 ml Baileys The Original Irish Cream

  • A pinch of salt, optional

  • 1 tbsp cocoa powder, optional

  • Vanilla Ice Cream:
  • 300 ml whipping cream

  • 120 g condensed milk

  • 2 tsp vanilla extract

  • A pinch of salt, optional

  • Others:
  • Dark chocolate compound, melted

  • Cocoa powder

Directions

  • Combine the condensed milk, vanilla extract, salt, and cream (cold) and whip until firm and expanded. Transfer into a plastic bag and keep in the fridge.
  • Combine the cornstarch, yolk, salt, and condensed milk. Mix well.
  • Bring the milk to a boil in a pan. Pour into the yolk mixture while stirring.
  • Put it back in the pan and cook until thickened while stirring. Turn the heat off.
  • Add the Baileys The Original Irish Cream in. Mix well, strain, and wrap in plastic. Keep in the fridge.
  • Whip the cream and mix with the cooled custard. Mix well and add cocoa powder. Transfer to a plastic bag / piping bag.
  • Add the melted chocolate into a piping bag.
  • Prepare a pan / container lined with baking paper and pipe the Vanilla ice cream to the bottom of the pan. Pipe the melted chocolate on top, then create a pattern with a chopstick.
  • Pipe the Coffee ice cream with a flat piping tip (optional) in a wave pattern. Then, pipe the melted chocolate on top.
  • Sprinkle some cocoa powder on top. Repeat steps no. 8 and no. 9.
  • Decorate the top surface to your preference.
  • Freeze the ice cream for at least 4-5 hours in the freezer.
