Using a food processor, puree the onion, garlic, cayenne pepper, curly red chile, turmeric, ginger, and candlenut. Add a few drops of frying oil.
Season with pepper, salt, chicken stock powder, and sweet soy sauce to taste. Stir in the spices until fully combined.
Rub the ground spices all over the fish's surface. Allow it to sit for 30 minutes.
Bake the fish on a low heat in a Teflon pan. Flip it over when one side is finished. Brush with spices once more to bring out the flavors.
When it's done, take it out and serve it.
