Ingredients
  

  • 2 eggs
  • 60 g dates
  • 150 g ripe bananas
  • 100 g low-protein flour
  • ¾ tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp vanilla extract
  • 70 g VCO (Virgin Coconut Oil)

Instructions
 

  • Prepare the dates by removing the seeds.
  • Blend the dates and bananas until smooth, set aside.
  • In a bowl, whisk the eggs with the banana-date mixture and vanilla extract. Mix at high speed until it thickens and leaves a trail (about 10 minutes, depending on your mixer).
  • Sift the flour with baking powder and baking soda, then gently fold it into the mixture using a spatula.
  • Add the VCO and fold it in until evenly mixed.
  • Prepare a 20 x 10 cm baking pan, grease it with oil and line it with baking paper.
  • Pour the batter into the pan, even out the surface by lightly tapping.
  • Add toppings as desired.
  • Bake in an oven at 160°C (320°F) for 40 minutes or until done (adjust according to your oven).
  • Serve warm.
