Blend the dates and bananas until smooth, set aside.
In a bowl, whisk the eggs with the banana-date mixture and vanilla extract. Mix at high speed until it thickens and leaves a trail (about 10 minutes, depending on your mixer).
Sift the flour with baking powder and baking soda, then gently fold it into the mixture using a spatula.
Add the VCO and fold it in until evenly mixed.
Prepare a 20 x 10 cm baking pan, grease it with oil and line it with baking paper.
Pour the batter into the pan, even out the surface by lightly tapping.
Add toppings as desired.
Bake in an oven at 160°C (320°F) for 40 minutes or until done (adjust according to your oven).
Serve warm.
