I have shared the Amanda brownies recipe with spoon measure ingredients. Because most of ingredients use a spoon measure, so it becomes very immeasurable. This time I tried to rebake Amanda Brownies Steamed Chocolate which was very soft and moist. I tried to add UHT liquid milk to the chocolate mixture, so it was runnier.
From this 50 ml dose of UHT liquid milk, I roughly pour it slowly, until the dough becomes a bit runny. But it’s not too runny, so I don’t pour all of the UHT liquid milk.

Tips to make Steamed Brownies Soft and Not Stuffy
- choose the right steamer and the pan
choosing a steamer that matches the size of the pan with a hole that is not too big, if the steamer is too big then the water vapor will be too much and the cake will be wet,
choose a steamer with a glass cover/cone shape, so that moisture does not fall into the brownie dough
- prepare the steamer
You have to heat the steamer for about 10 minutes, cover the steamer cover with a cloth so that the steam water does not fall into the brownie mixture. We recommend using a thick cotton cloth that can absorb moisture and avoid dripping onto the cake.
- adjust the temperature when steaming
After the water boils, reduce the heat and use medium heat so that the brownies cook evenly, and don’t get wavy
- open the lid of the steamer when it is cooked
Be careful when opening the lid of the steamer after the brownies are cooked, because on the lid of the steamer there is a lot of moisture attached, if the water drips it will make the brownies wet and spoil the texture. The trick is to open and flip the lid of the steamer quickly so that the water doesn’t have time to drip.
